Receita de Batata Doce com Frango Cremoso

Ingredientes:

  • 2 batatas doces médias
  • 100 g de peito de frango desfiado
  • azeite
  • orégano a gosto
  • 1 colher de sopa de requeijão cremoso
  • 1 cebola pequena em fatias finas
  • 1 colher de sopa de água
  • 1 colher de sopa de salsinha picada ou coentro
  • 2 colheres de sopa de mussarela ralada
  • sal e pimenta do reino a gosto

Preparo:

  1. Pré-aqueça o forno  por 15 minutos. Unte com azeite a forma.
  2. Lave e seque bem as batatas doces e faça furinhos com garfo, (ajudar a batata a cozinhar por inteiro sem rachar). Leve ao forno e deixe assando por cerca de 1h ou até ficarem macia.
  3. Em uma frigideira, aqueça um pouco de azeite em fogo baixo e refogue a cebola até ficar transparente.
  4. Junte o frango tempere com orégano, sal e pimenta a gosto. Acrescente a água e misture bem.
  5. Deixe refogar, mexa algumas vezes, até que o frango tenha absorvido o liquido. Adicione o requeijão e a salsinha. Misture até incorporar e desligue.
  6. Em uma tigela misture meia colher de sopa de azeite e uma pitada de sal.
  7. Retire a batata doce do forno e faça um corte no meio no sentido do comprimento. Se achar melhor pode esperar ficar morna.
  8. Com cuidado abra a batata doce no meio, com um garfo solte um pouco da parte interna.
  9. Pincele o azeite com sal por dentro e por fora das batatas, coloque colheradas generosas de frango e cubra com mussarela.
  10. Volte para o forno por mais 15 minutos ou até que o queijo comece a dourar.
